While foods containing allergens will continue to be clearly marked in all 5 of our dining halls, Kitchen West makes dining effortless for those affected by the Big 8.
Eggs, fish, milk, peanuts, shellfish, soy, tree nuts or wheat (plus barley & rye) will never be used in our kitchen.
Nearly every dish is made from scratch using whole ingredients that are naturally free of the Big 8 Allergens and gluten.

UNT Dining Services team members in all of our locations complete allergy and gluten training specifically tailored to the foodservice and hospitality industry. We’re even making our own stocks and broths, and growing leafy greens and herbs in our on-campus organic non-GMO hydroponic garden, Mean Green Acres. What we can’t make or grow ourselves, we source from reputable, often local, sources.
Our professional chefs bring decades of industry experience to the university, and they’ve developed recipes that are Free of Allergens but Full of Flavor.
We’re serving up fried chicken, chili mac and cornbread, enchiladas, creamy pasta, vegetarian dishes, a fresh salad bar, homemade focaccia bread and more.
Even the baked goods, like our chocolate chip cookies, snickerdoodles and cupcakes, are produced on site by the Kitchen West culinary team.
We can’t quite guarantee every ingredient doesn’t contain trace allergens due to manufacturing processes, so if you have any concerns about what is served at Kitchen West or any of our Dining Halls, please talk with one of our managers or chefs on duty, who can provide more details on what’s featured on the serving line that day.
